We\u2019ve swapped out the butter and double cream for chicken stock, garlic, milk, and parmesan for a sauce that is still rich, creamy, and full of flavour, with only a fraction of the calories and fat than restaurant recipes.<\/p>\n<p class=\"p1\">It\u2019s also easy to make and only takes only 20 minutes from prep to plate &#8211; so it\u2019s a great option for a healthy dinner when you\u2019re short for time but still want a wholesome meal.<\/p>\n<p class=\"p1\">This recipe is high in protein to keep you full, but if you want to bulk up the servings without loading up on pasta and carbs, add some season vegetables to the dish. Peas, broccoli, roast tomatoes, and mushrooms are all great additions to our low-fat chicken alfredo dish.<\/p>\n<h3 class=\"p1\">Ingredients (Serves: 2)<\/h3>\n<ul style=\"line-height: 2;\">\n<li class=\"p1\">200g chicken breast<\/li>\n<li class=\"p1\">2 garlic cloves, minced<\/li>\n<li class=\"p1\">120ml chicken stock<\/li>\n<li class=\"p1\">120ml semi skimmed milk<\/li>\n<li class=\"p1\">150g linguine pasta<\/li>\n<li class=\"p1\">40g spinach<\/li>\n<li class=\"p1\">10g parmesan<\/li>\n<li class=\"p1\">1 tbsp flour<\/li>\n<li class=\"p1\">Garlic low-calorie oil spray<\/li>\n<li class=\"p1\">Fresh basil (to serve)<\/li>\n<li class=\"p1\">Salt and pepper<\/li>\n<li style=\"list-style-type: none;\"><\/li>\n<\/ul>\n<h3 class=\"p1\">Method:<\/h3>\n<ol style=\"line-height: 2;\">\n<li class=\"p1\"><strong>Season and cook the chicken<\/strong><br \/>\nSpray a frying pan with garlic low-calorie oil spray and add the chicken, seasoned with salt and pepper (to taste).<br \/>\nCook the chicken for 5 \u2013 6 minutes on each side until it\u2019s cook through.<br \/>\nOnce there is no pink meat, remove the chicken from the pan and set aside to rest.<\/li>\n<li class=\"p1\"><strong>Cook the pasta:<\/strong><br \/>\nOnce the chicken has been put in the pan, bring a pan of water up to the boil and cook the linguine pasta as per the directions on the packet until al-dente (the pasta is firm to bite, but not too soft).<\/li>\n<li class=\"p1\"><strong>Make the alfredo sauce:<\/strong><br \/>\nIn the pan used to cook chicken, add the minced garlic and saut\u00e9 for one minute over medium heat.<br \/>\nStart to sprinkle the flour over the garlic and slowly add in the chicken stock, stirring continually to avoid lumps.<br \/>\nNext, add milk gradually, stir and then allow to boil to thicken the sauce.<br \/>\nOnce the sauce has thickened, add the spinach and stir until wilted.<\/li>\n<li class=\"p1\"><strong>Combine everything and serve:<\/strong><br \/>\nRemove the sauce from the heat and add in the cooked pasta.<br \/>\nSlice the chicken and add to the dish.<br \/>\nTop with parmesan and fresh basil.<\/li>\n<\/ol>\n<p>____<\/p>\n<p>Looking for more healthy pasta recipes?
