With minimal prep and easy cleanup, it\u2019s perfect to put together on busy evenings but you don\u2019t have to compromise on taste. Fresh herbs, zingy lemon, and a touch of parmesan bring everything together for a nourishing, comforting meal.<\/p>\n<p>Serves: 2<br \/>\nPrep time: 10 mins<br \/>\nCook time: 25 mins<br \/>\n[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column][vc_column_text css=&#8221;&#8221;][\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column][vc_column_text css=&#8221;&#8221;][\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column width=&#8221;1\/2&#8243;][vc_column_text css=&#8221;&#8221;]<\/p>\n<h3 class=\"p1\">Ingredients<\/h3>\n<ul style=\"line-height: 2;\">\n<li class=\"p1\">2 salmon fillets<\/li>\n<li class=\"p1\">1 shallot, finely diced<\/li>\n<li class=\"p1\">2 cloves garlic, crushed<\/li>\n<li class=\"p1\">200g cherry tomatoes<\/li>\n<li class=\"p1\">8 sun-dried tomatoes, diced<\/li>\n<li class=\"p1\">1 jarred roasted red pepper, diced<\/li>\n<li class=\"p1\">\u00bd tsp smoked paprika<\/li>\n<li class=\"p1\">1 chicken stock cube<\/li>\n<li class=\"p1\">1 tin chickpeas, drained<\/li>\n<li class=\"p1\">2 tbsp low fat Greek yoghurt<\/li>\n<li class=\"p1\">1 lemon, zested<\/li>\n<li class=\"p1\">2 tsp lemon juice, freshly squeezed<\/li>\n<li class=\"p1\">15g parmesan, grated<\/li>\n<li class=\"p1\">2 handfuls of baby spinach<\/li>\n<li class=\"p1\">10 fresh basil leaves<\/li>\n<li class=\"p1\">Salt and pepper, to taste<\/li>\n<li class=\"p1\">Fresh parsley, to serve<\/li>\n<li class=\"p1\">Low calorie oil spray<\/li>\n<\/ul>\n<p>[\/vc_column_text][\/vc_column][vc_column width=&#8221;1\/2&#8243;][vc_column_text css=&#8221;&#8221;]<\/p>\n<p style=\"text-align: right;\"><iframe loading=\"lazy\" src=\"https:\/\/www.youtube.com\/embed\/znhBORUaI44\" width=\"500\" height=\"700\"><br \/>\n<\/iframe><\/p>\n<p>[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column][vc_column_text css=&#8221;&#8221;]<\/p>\n<h3>Method:<\/h3>\n<ol>\n<li>Season the salmon fillets with salt and pepper.<\/li>\n<li>Heat a generous few sprays of low calorie oil spray in a large pan and sear the salmon on all sides until nicely coloured. Remove from the pan and set aside.<\/li>\n<li>In the same pan, add a touch more oil spray if needed and gently sweat the chopped shallot and crushed garlic with a pinch of salt. Stir in the cherry tomatoes, chopped sun-dried tomatoes, roasted pepper and smoked paprika.<\/li>\n<li>After a few minutes of saut\u00e9ing, crumble in the chicken stock cube and pour in 200ml of boiling water. Bring to a simmer.<\/li>\n<li>Add the drained chickpeas. Cook gently for around 5 minutes.<br \/>\nTurn the heat down low. Stir in the Greek yoghurt, lemon zest, lemon juice, grated parmesan, and a good grind of black pepper.
