Packed with crunchy veg, creamy avocado, and fragrant herbs, each roll is a bite of freshness, and paired with a zingy, protein-rich satay noodle salad, this dish is as satisfying as it is nourishing.<\/p>\n<p>Whether you want to add the prawns or you\u2019d rather go for the vegetarian version, dipping each summer roll into the homemade satay sauce is a real treat, and this recipe creates a vibrant plate, perfect for any occasion.<\/p>\n<p>Serves: 2<br \/>\nPrep time: 20 mins<br \/>\nCook time: 0 mins[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column][vc_column_text css=&#8221;&#8221;][\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column][vc_column_text css=&#8221;&#8221;][\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column width=&#8221;1\/2&#8243;][vc_column_text css=&#8221;&#8221;]<\/p>\n<h3 class=\"p1\">Ingredients<\/h3>\n<h3>Rolls:<\/h3>\n<ul>\n<li>8 rice paper sheets<\/li>\n<li>150g cooked prawns<\/li>\n<li>\u00bd cucumber, finely sliced into matchsticks<\/li>\n<li>\u00bd carrot, finely sliced into matchsticks<\/li>\n<li>\u00bd red pepper, finely sliced into matchsticks<\/li>\n<li>\u00bd avocado, finely sliced into matchsticks<\/li>\n<li>A small handful of fresh coriander, finely chopped<\/li>\n<li>1 tsp white and black sesame seeds<\/li>\n<\/ul>\n<h3>Noodle Salad:<\/h3>\n<ul>\n<li>100g rice noodles, cooked<\/li>\n<li>50g shredded red cabbage<\/li>\n<li>1 carrot, grated<\/li>\n<li>4 radishes, finely sliced<\/li>\n<li>\u00bd red pepper, finely sliced<\/li>\n<li>1 spring onion, finely sliced<\/li>\n<li>3 tbsp fresh coriander, finely shopped<\/li>\n<li>1 tbsp unsalted roasted peanuts, crushed<\/li>\n<\/ul>\n<h3>Satay sauce:<\/h3>\n<ul>\n<li>2 tbsp smooth natural peanut butter<\/li>\n<li>1 tsp maple syrup<\/li>\n<li>1 tsp lemon juice<\/li>\n<li>1 tsp soy sauce<\/li>\n<li>1\u20132 tbsp water (to loosen)<\/li>\n<li>1 tsp chilli flakes<\/li>\n<\/ul>\n<p>[\/vc_column_text][\/vc_column][vc_column width=&#8221;1\/2&#8243;][vc_column_text css=&#8221;&#8221;]<\/p>\n<p style=\"text-align: right;\"><iframe loading=\"lazy\" src=\"https:\/\/www.youtube.com\/embed\/NzyXlex6Pw0\" width=\"500\" height=\"700\"><br \/>\n<\/iframe><\/p>\n<p>[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column][vc_column_text css=&#8221;&#8221;]<\/p>\n<h3>Methode:<\/h3>\n<ol>\n<li>Slice the prawns in half lengthways if they are large.<\/li>\n<li>Dip a rice paper sheet into cold water for a few seconds until just softened, then lay it flat on a chopping board.<\/li>\n<li>For the prawn rolls, arrange a few slices of prawn along with cucumber, carrot, red pepper, avocado, and coriander leaves in the centre of the sheet. Fold the sides over the filling, then roll up tightly to seal. Repeat to make 2 prawn rolls per person.<\/li>\n<li>For the veggie rolls, arrange just the vegetables and herbs in the centre of the rice paper sheet without any prawns. Roll up in the same way. Make 2 veggie rolls per person.<\/li>\n<li>Once all the rolls are made, sprinkle with sesame seeds. Pop in the fridge until ready to serve.<\/li>\n<li>Top tip \u2013 make a few of these at a time for an easy food prep or snack for in the week.<\/li>\n<li>Add all of the ingredients for the noodle salad into a large bowl, mix well.<\/li>\n<li>For the sauce, stir together the peanut butter, maple syrup, lemon juice, soy sauce, and a little water in a bowl until smooth and creamy.
