This Sticky Harissa Tofu with Cous Cous\u00a0is a flavour-packed meat-free dish perfect for meal prep or a vibrant dinner!<\/p>\n<p>With golden, crispy tofu tossed in a sweet harissa glaze, paired with roasted veg and fluffy giant cous cous, this dish is a delicious celebration of textures and spices, and it\u2019s entirely vegetarian, with easy vegan swaps.<\/p>\n<p>With high protein tofu and high-in-fibre chickpeas, this recipe keeps you full and fuelled, while the rainbow of roasted vegetables and fresh herbs means you\u2019re easily hitting three of your five-a-day.<\/p>\n<p>Serves: 2<br \/>\nPrep time: 15 mins<br \/>\nCook time: 25 mins<br \/>\n[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column][vc_column_text css=&#8221;&#8221;][\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column][vc_column_text css=&#8221;&#8221;][\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column width=&#8221;1\/2&#8243;][vc_column_text css=&#8221;&#8221;]<\/p>\n<h3 class=\"p1\">Ingredients<\/h3>\n<h3>Tofu:<\/h3>\n<ul>\n<li class=\"p1\">200g firm tofu<\/li>\n<li class=\"p1\">1 tbsp cornflour<\/li>\n<li class=\"p1\">Salt and pepper<\/li>\n<li class=\"p1\">Low calorie oil spray<\/li>\n<\/ul>\n<h3>Cous Cous Salad:<\/h3>\n<ul>\n<li class=\"p1\">1 courgette, diced into chunks<\/li>\n<li class=\"p1\">\u00bd red onion, diced into chunks<\/li>\n<li class=\"p1\">150g cherry tomatoes, halved<\/li>\n<li class=\"p1\">100g chickpeas, drained<\/li>\n<li class=\"p1\">100g giant couscous, uncooked<\/li>\n<li class=\"p1\">A handful of baby spinach, sliced<\/li>\n<li class=\"p1\">1 tbsp fresh coriander, finely chopped<\/li>\n<li class=\"p1\">1 tbsp fresh mint, finely chopped<\/li>\n<\/ul>\n<h3>Harissa Glaze<\/h3>\n<ul>\n<li class=\"p1\">1 tbsp harissa paste<\/li>\n<li class=\"p1\">1 tbsp honey (or vegan alternative)<\/li>\n<li class=\"p1\">\u00bd tsp ground cumin<\/li>\n<li class=\"p1\">\u00bd tsp paprika<\/li>\n<li class=\"p1\">3 tbsp water<\/li>\n<li class=\"p1\">\u00bd lemon, juiced<\/li>\n<li class=\"p1\">1 tsp cornflour, mixed with 1 tbsp water<\/li>\n<\/ul>\n<h3>Mint yoghurt<\/h3>\n<ul>\n<li class=\"p1\">2 tbsp Greek yoghurt<\/li>\n<li class=\"p1\">2 tsp mint sauce<\/li>\n<\/ul>\n<p>[\/vc_column_text][\/vc_column][vc_column width=&#8221;1\/2&#8243;][vc_column_text css=&#8221;&#8221;]<\/p>\n<p style=\"text-align: right;\"><iframe loading=\"lazy\" src=\"https:\/\/www.youtube.com\/embed\/VLeFz7vWCJw\" width=\"500\" height=\"700\"><br \/>\n<\/iframe><\/p>\n<p>[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column][vc_column_text css=&#8221;&#8221;]<\/p>\n<h3>Method:<\/h3>\n<ol>\n<li>Preheat the oven to 200\u00b0C \/ fan 180\u00b0C.<\/li>\n<li>Press the tofu to remove moisture if needed, then tear it into bite-sized pieces.<\/li>\n<li>In a bowl, toss the tofu with 1 tbsp cornflour and a little salt and pepper until evenly coated.<\/li>\n<li>Spread the tofu, tomatoes, courgette, red onion and chickpeas onto a lined baking tray. Spray generously with low calorie oil spray, season generously.<\/li>\n<li>Place in the oven to roast for 20 minutes, turning halfway through.<\/li>\n<li>Cook giant cous cous as per packet instructions, drain and set aside. Keep warm, covering with tin foil until ready to serve.<\/li>\n<li>Meanwhile, make the harissa glaze by whisking all of the ingredients together in a bowl and cornflour together in a small bowl.<\/li>\n<li>Then stir the yoghurt with mint sauce and set aside in the fridge until ready to serve.<\/li>\n<li>Once the tofu, chickpeas and vegetables are cooked, heat a frying pan over medium heat.<\/li>\n<li>Pour in the harissa glaze and allow it to bubble and thicken slightly. Add the tofu and stir to coat thoroughly in the sticky glaze.<\/li>\n<li>Toss cous cous it with the roasted vegetables, chopped spinach and fresh herbs.
