These mouth-watering vegan cauliflower tacos will take taco night to the next level. They\u2019re 100% plant based but still packed with lots of flavour. Made with a delicious garlic marinade and a spicy cashew sauce for a creamy but tangy kick.<\/p>\n<h3>Ingredients (serves 4):<\/h3>\n<ul>\n<li>12 mini tortillas \/ taco shells<\/li>\n<li>2 cauliflower heads, separated into florets<\/li>\n<li>4 garlic cloves, crushed<\/li>\n<li>2 tbsp olive oil<\/li>\n<li>3 tsp ground cumin<\/li>\n<li>2 tsp smoked paprika<\/li>\n<li>1 tsp salt<\/li>\n<\/ul>\n<p><strong>Cashew cream:<\/strong><\/p>\n<ul>\n<li>1 tsp red chilli flakes<\/li>\n<li>1 tbsp minced garlic<\/li>\n<li>4 tbsp cashew butter<\/li>\n<li>2 tbsp lime juice<\/li>\n<li>\u00bd lime, zested<\/li>\n<li>2 tbsp water<\/li>\n<li>Salt and pepper to taste<\/li>\n<\/ul>\n<p><strong>Garnish:<\/strong><\/p>\n<ul>\n<li>1 onion<\/li>\n<li>1 avocado<\/li>\n<li>1 radish<\/li>\n<li>Handful or fresh coriander<\/li>\n<\/ul>\n<h3>Method:<\/h3>\n<p>Preheat your oven to 200 degrees Celsius.<br \/>\nCombine olive oil, cumin, paprika, garlic and salt to a bowl and mix to create a marinade.<br \/>\nAdd chopped cauliflower florets to the bowl and coat in your garlic marinade.<br \/>\nPlace the cauliflower onto a lined baking tray and pop in the oven for 30 minutes, turning halfway through.<br \/>\nWhilst the cauliflower is cooking, it\u2019s time to make your spicy cashew cream. Simply mix together all of the ingredients until fully combined and place into the fridge until you are ready to serve.<br \/>\nNext up, prepare your garnishes. Slice and dice your avocado, radish and onion and separate your coriander stems.<br \/>\nFinally, heat a frying pan, and place tortillas on to warm for about 20-30 seconds each side. You want them to brown and warm but not burn.<br \/>\nTop your tortillas with the marinaded cauliflower, garnishes and a drizzle of the spicy cashew cream sauce.
